Ingredients
- 3Eggs
- 100 gCaster Sugar
- 100 gSunflower Oil
- 100 gPlain Flour
- 100 gGround Almonds
- 120 gRaisin
- 1 teaspoonBaking Powder
- 1 teaspoonVanilla Extract
- Flaked Almonds for Garnish
Preparation
1- Preheat the oven to 325°F/180°C; Line a 7 inch springform cake pan with parchment paper or grease it with cooking spray, set aside.
2- Put the Raisin into a bowl with hot water. Finely Grind the Almonds using a food processor, keep everything aside.
3- Put the Eggs, Sunflower Oil and Sugar in a large bowl. Mix the ingredients with a fork or a spoon until gelatinous but smooth.
4- Add the Plain Flour, Ground Almonds, Baking Powder and Vanilla Extract. Keep mixing until well combined.
5- Drain the Raisin, add to the mixture then mix until well combined.
6- Pour the mixture into the cake pan, garnish the surface with a handful of Flaked Almonds.
7- Bake the Almond Raisin Cake for about 35 minutes or until a skewed inserted in the middle of the cake comes out clean.
