The Blueberry crumb Cake is a crunchy, delicious and very easy to make cake. To prepare it we will use only a large bowl and our hands, nothing else. We can customize the Blueberry Crumb Cake by adding ingredients to the final dough, such as cinnamon powder or chocolate chips, we can also vary the fruit, instead of blueberries we can use raspberries or mixed berries. Ingredients
- 1Egg
- 100 gCaster Sugar
- 100 gUnsalted Butter
- 200 gPlain Flour
- 1 teaspoonBaking Powder
- 1 teaspoonVanilla Extract (or similar)
- 250 gFresh Blueberries
Preparation
1- Preheat the oven to 325°F/180°C; Line a 7 inch springform cake pan with parchment paper or grease it with cooking spray.
2- Put the Egg, Caster Sugar, Unsalted Butter, Plain Flour, Baking powder and Vanilla Extract in a large bowl.
3- Knead the ingredients with your hands until getting a crumble dough.
4- Compact half of the dough on the base of the cake pan using the hands.
5- Add the Blueberries taking care not to let them touch the side of the cake pan.
6- Cover the Blueberries by crumble the remaining dough over them, trying to close every hole.
7- Bake the Blueberry Crumb Cake for 40 minutes or until golden brown.
