Ingredients
- 1Egg White
- 100 gCaster Sugar
- 200 gGround Almonds
- 1 teaspoonVanilla Extract
- q.s.Icing Sugar
Preparation
1- Preheat oven to 325°F/180°C; Line a baking tray with parchment paper, set aside.
2- Finely grind the Almonds using a food processor, set aside.
3- Whip the Egg Whites in a large bowl using a hand mixer until white.
4- Add the Caster Sugar then keep whipping until very firm but creamy.
5- Add the ground Almonds and Vanilla Extract, mix again at low speed or with a spatula until well combined.
6- Take the dough and make some balls using your hands, each ball should weigh about 20 grams.
7- Arrange the cookies on the prepared baking tray spaced apart each other, press in the center of each ball with the tip of your thumb., sprinkle with some Icing Sugar.
8- Bake the Chewy Almond Cookies for about 15 minutes.
