The Coconut Ricotta Truffles are some easy and quick sweets to make, perfects for every time of the day and for every season of the year. They are so easy to make that we will only need 3 ingredients. You can personalize your Truffles by adding some extra ingredients to the dough, such as chocolate chips of chopped hazelnuts for example.

- 250 gRicotta (or Cream Cheese)
- 120 gIcing Sugar
- 200 gDesiccated Coconut
1- Mix the Ricotta and the Caster Sugar in a large bowl using a wooden spoon or a spatula, we should get a smooth and creamy mixture.
2- Add the Desiccated Coconut, keep mixing until fairly firm.
3- Shape little balls of about 15 gr each, using your hands, if the dough should stick to your hands, wet them with tap water.
4- Pour some Desiccated Coconut into a dish or bowl, dip one ball at a time then roll them until well covered.
5- Refrigerate the Coconut Ricotta truffles into the fridge for at least 3 hours.
