Ingredients
For the Crust
- 1Egg
- 120 gSunflower Oil
- 150 gCaster Sugar
- 250 gPlain Flour
- 40 gCocoa Powder
- 1 teaspoonBaking Powder
- 2 teaspoonsWater
For the Filling
- 1Egg
- 50 gIcing Sugar
- 100 gDark Chocolate
- 250 gRicotta
Preparation
1- Preheat the oven to 325°F/180°C; Line a 7 inch springform cake pan with parchment paper or grease it with cooking spray, set aside.
2- Melt the dark Chocolate in the microwave or in a saucepan over medium heat, leave to cool.
3- Prepare the Crust: put the Egg, caster Sugar and Sunflower Oil in a large bowl, mix the ingredients with a spoon until smooth.
4- Add the Plain Flour, Baking Powder and Cocoa Powder and Water, keep mixing until well combined and smooth.
5- Prepare the Filling: put Ricotta, Egg, Icing Sugar in a medium size bowl, mix the ingredients with a spoon until smooth, add the melted Dark Chocolate then mix again until well combined.
6- Stick the dough along the side and on the base of the tart pan using the hands, trim the edges with a knife.
7- Spread the filling into the shell, level well using the back of a spoon.
8- Bake the Ricotta and Chocolate Fluffy Tart for about 45 minutes.
