Ingredients
- 400 gGrated Carrots
- 200 gCaster Sugar
- 200 gGround Hazelnuts
- 100 gPlain Flour
- 4Eggs
- 1 teaspoonBaking Powder
- 1 teaspoonGround Nutmeg
Preparation
1- Preheat the oven to 325°F/180°C; Line a 9 inch springform cake pan with parchment paper or grease it with cooking spray, set aside.
2- Finely Grate the Carrots by using a grater or a food processor, set aside.
3- Finely Grind the Hazelnuts by using the food processor (previously cleaned from the carrots).
4- Put the Carrots, Hazelnuts and caster Sugar in a large bowl. Mix the ingredients until well combined, by using a spoon.
5- Add the Eggs then mix again until smooth.
6- Add Plain Flour, Baking Powder and Nut Meg, keep mixing until smooth and well combined.
7- Pour the mixture into the prepared cake pan.
8- Bake the Hazelnut Carrot Cake for about 45 minutes or until a skewed inserted in the middle of the cake comes out clean.
