Ingredients
- 4Eggs
- 220 gPlain Flour
- 170 gCaster Sugar
- 70 gSunflower Oil
- 1 teaspoonBaking Powder
- The Grated Zest of a lemon
- 1 teaspoonVanilla Extract
Preparation
1- Preheat the oven to 325°F/180°C; Line a 7 inch springform cake pan with parchment paper or grease it with cooking spray, (you can use a larger pan up to 9 inch, remember the cake will take few less minutes to cook) set aside.
2- Put the Eggs and the Sugar in a large bowl, whip the ingredients with a hand mixer for few minutes, until soft and whitish.
3- Pour the Sunflower Oil, mix again at slower speed until smooth.
4- Add the Plain Flour, Baking Powder, Lemon Zest and Vanilla Extract, mix again at slow speed until smooth and well combined.
5- Pour the mixture into the cake pan. Bake the Buckwheat Cake for about 45 minutes or until a skewer inserted in the cake comes out clean.
