The No Bake Sacher Torte is a reinterpretation in an easy, fast and cooking-free way of the famous Austrian cake. We can enjoy the cake at any time of the day, both as a breakfast and as a dessert. If you want to create a super tasty version of the cake, i suggest you to spread a layer of jam over the biscuit base. Let’s see the recipe!

Ingredients
For the Crust
- 250 gChocolate Biscuits
- 125 gUnsalted Butter
For the Filling
- 250 gMascarpone (or cream cheese)
- 2 spoonsApricot Jam
For the Ganache
- 150 gDark Chocolate
- 150 gHeavy Cream
Preparation
1- Set aside a 8 inches springform cake pan, we’ll need it later.
2- Grind the chocolate biscuits using a food processor or crushing them in a plastic bag. Melt the Butter, pour it into a bowl, add the ground biscuits then mix the ingredients using a spoon, set aside.
3- Put the dark chocolate (cut into pieces using your hands) inside a medium-sized bowl, bring the heavy cream to a boil in the microwave or inside a small saucepan over medium heat. Pour the boiling cream on the chocolate then mix with a spoon until smooth and creamy. Set aside.
4- Pour the mascarpone and the jam into a bowl, mix the ingredients with a spoon or with the hand mixer if possible, we should get a smooth and fairly thick.
5- Pour the biscuits mixture in the cake pan, form the crust by pressing well using the back of a spoon. Pour the filling over the crust, level well using the back of a spoon, pour the ganache over the cream then level if needed.
6- Refrigerate the No Bake Sacher Torte for at least 3 hours, overnight if possible.
