Peach Muffins

Peach Muffin are fluffy and tasty little cakes, quick and easy to make, and the perfect start to the day with a cup of strong coffee. We can customize Peach Muffins in a thousand different ways, by adding some ingredients to the mixture, such as chocolate chips or some drops of liquor, or we can use walnuts or hazelnuts instead of almonds. Ingredients

  • 1Egg
  • 100 gGranulated Sugar
  • 200 gSour Cream
  • 50 gSunflower Oil
  • 50 gMilk
  • 200 gPlain Flour
  • 50 gGround Almonds
  • 1 teaspoonBaking Powder
  • 1 teaspoonGround Cinnamon
  • Chopped Almonds and Pearl Sugar for Garnish

Preparation

  1. Peach Muffins

    1- Preheat the oven to 170°C/325°F, line a 12 cup muffin pan with paper liners, set aside.

  2. 2- Grinds the Almonds using a food processor, cut the Peaches into small pieces using chopping board and knife, it’s not necessary to peel them, set aside.

  3. 3- Pour the Egg, Sugar, Milk and Sour Cream into a large bowl, mix all the ingredients with a spoon or a fork until the mixture is liquid but fairly smooth.

  4. Peach Muffins

    4- Add the Ground Almonds, Flour, Baking Powder and Cinnamon, keep mixing with a spoon until the mixture is smooth and well combined. Add the Peaches to the mixture, mix until well combined.

  5. 5- Using two spoons, put the mixture into the paper liners until two-thirds full but we can also get almost to the brim. Garnish with Chopped Almonds and Pearl Sugar.

  6. 6- Bake the Peach Muffin for 25-30 minutes or until golden brown.
