The Ricotta Almond Soft Cake is an easy-to-make recipe perfect for every moment of the day, especially breakfast, maybe tasted with a good cup of coffee. You can customize your own Ricotta Almond Cake by adding some extra ingredients to the final mixture, such as grated zest of a lemon or an orange, some spoons of chocolate chips or a spoon of liquor. - 2 Eggs
- 150 gr Caster Sugar
- 250 gr Ricotta
- 50 gr Milk
- 150 gr Plain Flour
- 100 gr Ground Almonds
- 1 tsp Baking Powder
- 1/2 tsp Vanilla Extract (or Grated Lemon or Orange Zest)
1- Preheat the oven to 325°F/180°C; Line a 7 inch springform cake pan with parchment paper, set aside.
2- Finely Grind Almonds by using a food processor, set aside.
3- Put Eggs and Sugar in a large bowl. Whip the ingredients with the hand mixer for few minutes, until soft and whitish.
4- Add Ricotta and Milk, keep mixing at slower speed until well combined.
5- Add Plain Flour, Ground Almonds, Baking Powder and Vanilla extract, mix again until smooth and well combined.
6- Pour the mixture into the cake pan, level it by using a spatula or the back of a spoon.
7- Bake the Ricotta Almond Soft Cake for about 40-45 minutes, or until a skewed inserted in the middle of the cake comes out clean.
