- 3Egg Yolks
- 750 gRicotta
- 200 gCaster Sugar
- Grated Zest of 1 Lemon
- 150 gPlain Flour
- 100 gGround Walnuts
- 300 gChopped Plums
1- Preheat the oven to 325°F/180°C; Line a 9 inch springform cake pan with parchment paper or cooking spray, set aside.
2- Finely grind the Walnuts using a food processor and chop the Plums with chopping board and a knife, set aside.
3- Put the Egg yolks, Ricotta, Sugar and the Lemon Zest in a large bowl.
4- Mix the ingredients with the hand mixer until smooth and creamy.
5- Add the Ground Walnuts and Plain Flour, mix again until well combined.
6- Add the Chopped Plums then mix again with a spatula or a spoon.
7- Pour the mixture into the cake pan, level it using the back of a spoon.
8- Bake the Ricotta, Plum and Walnut Cake for about 45 minutes or until a skewer inserted in the cake comes out clean.
