Ingredients
- 3Eggs
- 250 gPlain Flour
- 150 gCaster Sugar
- 120 gSunflower Oil
- 100 gWater
- 3Apples
- 1 teaspoonBaking Powder
- 1 teaspoonGround Cinnamon
- 1 teaspoonVanilla Extract (or similar)
Preparation
1- Preheat the oven to 325°F/180°C; Line a 7 inch springform cake pan with parchment paper or grease it with cooking spray, (you can use a larger pan up to 9 inch, remember the cake will take few less minutes to cook) set aside.
2- Peel the Apples, chop 2 of them into same size dices and 1 of them into slices, put them in a bowl with some drops or lemon juice. Set aside.
3- Put the Eggs and the Sugar in a large bowl, whip the ingredients with a hand mixer for few minutes, until soft and whitish.
4- Pour the Water and Sunflower Oil, mix again at slower speed until smooth.
5- Add the Plain Flour, Baking Powder, Vanilla Extract and Ground Cinnamon, mix again at slow speed until well combined and smooth.
6- Add the diced Apples to the mixture then mix with a spatula or a spoon until well combined.
7- Pour the mixture into the cake pan then level well with the back of a spoon. Arrange the apple slices overlapping in a concentric circle over the mixture then sprinkle with a handful of caster sugar.
8- Bake the Water Apple Cake for about 50 minutes or until a skewer inserted in the cake comes out clean.
