Ingredients
- 400 gGrated Carrots
- 200 gGround Almonds
- 200 gCaster Sugar
- 4Eggs
- 120 gPlain Flour
- 1 teaspoonBaking Powder
- The Grated Zest of Half a Lemon
- 1 teaspoonVanilla Extract (or similar)
Preparation
1- Preheat the oven to 325°F/180°C; Line a 9 inch springform cake pan with parchment paper or grease it with cooking spray, set aside.
2- Finely grind the Almonds using a food processor, set aside.
3- Grate the Carrots using a grater or the food processor, set aside.
4- Put the Sugar, Grated Carrots and Ground Almonds in a large bowl, mix the ingredient with a spoon until well combined.
5- Add the Eggs, keep mixing util well combined.
6- Add the Plain Flour, Baking Powder and Vanilla Extract, keep mixing until smooth.
7- Pour the mixture into the cake pan. Bake the Almond Carrot Cake for about 45 minutes or until a skewer insert in the middle of the cake comes out clean.
