Apple Hazelnut Cake

The Apple Hazelnut Cake is a perfect autumn cake, perfect for breakfast and for noon break both, maybe with a good cup of coffee or tea. In order to prepare it we’ll need a food processor for grind the hazelnuts, some bowls, a spoon or a fork and a knife for chopping apples. You can customize your own Cake by adding some ingredients to the final mixture, such as ground cinnamon or the grated zest of an orange. Let’s see the recipe!

Ingredients

  • 2Eggs
  • 150 gCaster Sugar
  • 100 gSunflower Oil
  • 100 gMilk
  • 100 gGround Hazelnuts
  • 80 gRaisin
  • 250 gPlain Flour
  • 2Apples
  • 1 teaspoonBaking Powder

Preparation

  1. Apple Hazelnut Cake

    1- Preheat the oven to 325°F/180°C; Line a 9 inch springform cake pan with parchment paper or grease it with cooking spray or butter. Set aside.

  2. 2- Peel the Apples, remove the seeds and chop them into small pieces, put them into a bowl with some drops of lemon juice to prevent them to become dark. Finely grind the Hazelnuts by using a food processor. Soften the Raisin by putting it into a glass full of water, set aside.

  3. 3- Put the Eggs, Caster Sugar, Sunflower Oil and Milk in a large bowl, mix the ingredients with a fork or a spoon until gelatinous but smooth.

    4- Add the Plain Flour, Ground Hazelnuts and Baking Powder, keep mixing until smooth and well combined.

  5. 5- Add the Apples and the drained raisin, mix again until well combined.

  6. 6- Pour the mixture into the cake pan then level it with the back of a spoon or a spatula.

  7. 7- Bake the Apple Hazelnut Cake for about 45 minutes or until a skewed inserted in the middle of the cake comes out clean.
