No Bake Blackberry Mascarpone Pie

You can personalize the Pie by using the kind of berries you want instead of the blackberries for example, or you can use your favorites biscuits to make the crust. Let’s see the recipe!

Ingredients

  • 300 gDigestive Biscuits
  • 150 gUnsalted Butter
  • 500 gMascarpone Cheese (or cream cheese) (250+250)
  • 375 gFresh Blackberries
  • 50 gDark Chocolate
  • 100 gIcing Sugar
  • 50 gHeavy Cream

Preparation

  1. 1- Line a 9 inch pie dish with plastic wrap, set aside.

  2. 2- Grind the biscuits using a food processor or crushing them in a plastic bag. Melt the Butter, pour it into a bowl, add the ground biscuits then mix the ingredients using a spoon, set aside.

  3. 3- Press this mixture into the base and up the side of the prepared pie dish, using the back of a spoon or your fingertips. Place into the fridge until we’ll need it later.

  4. 4- Blend 250 g of the Blackberries with 50 g of the Icing Sugar, pass the liquid through a sieve and bring it to boil in a pan, cook for about 5 minutes, add the Dark Chocolate and mix until completely melted, pour the mixture in a large bowl and leave to cool.

  5. 5- Add 250 gr of the Mascarpone cheese then mix until smooth and creamy, using a hand mixer.

  6. 6- Prepare the white cream by mixing in a large bowl the Mascarpone, the icing sugar and the cream using aa hand mixer (the whips must be clean) we should get a cream with a fairly firm consistency.

  7. 7-Spread the Blackberry filling into the pie crust then level it using the back of a spoon. Garnish a part of the tart with the remaining fresh blackberries and garnish the remaining part with the white cream using the pastry bag.

  8. 8- Refrigerate the No Bake Blackberry Mascarpone Pie into the fridge for at least 3 hours, or overnight if possible.
